I wonder whether you mean the buffalo proper - the water buffalo found in Europe and Asia - or the American beast? That is a different creature, and should properly be called a bison. However, to complicate matters further, I gather that domesticated bison have in fact been milked and that someone successfully managed to make mozzarella from their milk. It's a funny old world.
