One of the many wonderful features about baking your own bread...

...is that the signal that it is ready is the smell spreading across the flat. One of the best smells in the world. Of course, if you don't pay attention the first time, the next warning you get is the smell of burnt bread, which is by no means so pleasant....

I love baking my own breads, be they savory or sweet. When I get home from deployment I plan to experiment with clay pot, dutch oven and skillet baking too.

Bread baking is my great weakness as a cook. I get maybe one loaf in five right and the burnt smell is more familiar to me than the aroma of a perfect loaf.

Thank God for the Daily Bread bakery in my neighborhood.
